I miss hot cross buns

For me, Easter is one of the highlights of the year. I remember making Easter bonnets, and Easter gardens, Easter egg hunts, chocolate galore, baking simnel cake, Easter biscuits, and hot cross buns. The hot cross buns would be toasted and slathered with butter, delicious!

I was in the local church choir, and we would hold a vigil service on Good Friday at 3pm. It's recorded in the Bible that Jesus 'gave up his spirit at the 9th hour', this time would have been measured from sunrise at 6am.

I digress!

Today, I can't eat any of those foods, thanks to allergies and Eosinophilic Oesophagitis. I would suffer impaction in my oesophagus, and possibly aspirate from not being able to swallow. Put it this way-it wouldn't be pretty!

I have tried many recipes for gluten free breads, hotcross buns, etc over the past 15 or so years, with little success. They have either come out like bricks or cardboard, and ended up in the bin, so I got very disheartened, and very rarely cook anything. I'm so glad to have a wonderful husband who does most of the cooking these days, otherwise I probably wouldn't eat at all.

A new recipe!

This morning, I decided to try for something to have, that might resemble hotcross buns. Plucking up courage, and pulling up my 'big girl, you can do this pants', I set to in the kitchen. Here's the result.


Spiced fruit muffins! Yes! I've eaten one! Nomnomnom! They are light, tasty, free from the top 14 allergens, and they won't hang around for long!
